Virtualize only one Windows program w/WMware Fusion

Hello.

I use Windows w/VMware Fusion only two o three times a week.

I have a calling program called Symphony that enables calls from PC to Polycom telephones.

Is there a way to virtualize only this program and have it running all the time?

I see that Windows over Fusion reclaims a lot of resources and just really need to run one program all the time.
